Correct Option - 2

The correct adjective to describe a test should be along the lines of either 'easy' or 'difficult' or anywhere in between. 

Vulnerable means being exposed to the possibility of being harmed or attacked. Thus, option 1 does not fit the context.

Piece of cake means 'extremely easy'. This could have been the correct option if the given sentence had been framed as - 'The test proved to be a piece of cake for everyone in the class'. Using an adverb like 'extremely' before this phrase is incorrect.

Fixating means continuously gripped by something or being obsessed about something. 

Clearly, with reference to this context, the word 'challenging' which is synonymous with 'difficult' is the most suitable word for the given blank. Thus, option 2 is the correct answer.

Complete Sentence - The test proved to be extremely challenging for everyone in the class.
